(We can attest that once you get comfortable leaving your butter out on the counter, you'll never go back to the cold stuff). Designed for maximized airflow and natural cooling, our French-made Countertop Garde Manger lets you dip your toe into these old world culinary ways. Two of the three interior shelves are removable and reversible, with egg holders on one side and grooves on the other to promote airflow around, say, a nice hunk of fresh cheese. This keeps air moving, keeping your food cool and preventing mold growth. The wire mesh door allows maximum airflow and keeps insects and other pests away from the good stuff. Three hooks mounted at the cabinet top allow you to hang sausages- if you're feeling skittish about even that, you can even use them to dry freshly picked herbs from the garden. While supermarket eggs should absolutely be refrigerated, farm fresh eggs (unwashed ones only!) are perfectly happy to be at room temperature for a few days to a week or more. (Many bakers even swear that refrigerated eggs lose a certain ... je ne sais quoi when it comes to the finished product.)
